Chocolate Cashew Bars

Ingredients

  • CRUST:
  • 1 & 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • TOPPING:
  • 3/4 cup granulated sugar
  • 3/4 cup light corn syrup
  • 3 eggs, lightly beaten
  • 3 Tablespoons unsalted butter, melted

Instructions

  1. CRUST:
  2. Preheat oven to 350°.
  3. Using an electric mixer on slow speed, mix all crust ingredients until mixture resembles coarse crumbs. Press mixture into bottom of ungreased 9"x 13" baking pan.
  4. Bake for 15 minutes, or until edges are lightly browned.
  5. TOPPING:
  6. Stir together sugar, corn syrup, eggs, melted butter, and vanilla extract. Stir in cashews and chocolate chips.
  7. Spread topping over partially baked crust. Bake until set, about 28-32 minutes.
  8. Cool completely before cutting into bars. Cover and store refrigerated.
