- Heat oven to 350°F.
- Line the bottom of two 9-inch round pans with waxed paper.
- In a large mixer bowl, combine sugar, flour, cocoa, baking soda, baking powder, and salt.
- Add milk, egg substitute, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes.
- Remove from mixer and stir in boiling water; batter will be thin.
- Pour batter into the prepared pans.
- Bake for 18 to 22 minutes or until a wooden toothpick inserted in the center comes out clean.
- Cool for 10 minutes, then remove from pans to wire racks.
- Carefully remove waxed paper and cool completely.
