Ingredients

  • frozen egg substitute
  • lower calorie cherry pie filling

Instructions

  1. Heat oven to 350°F.
  2. Line the bottom of two 9-inch round pans with waxed paper.
  3. In a large mixer bowl, combine sugar, flour, cocoa, baking soda, baking powder, and salt.
  4. Add milk, egg substitute, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes.
  5. Remove from mixer and stir in boiling water; batter will be thin.
  6. Pour batter into the prepared pans.
  7. Bake for 18 to 22 minutes or until a wooden toothpick inserted in the center comes out clean.
  8. Cool for 10 minutes, then remove from pans to wire racks.
  9. Carefully remove waxed paper and cool completely.
  10. Spread lower calorie cherry pie filling between the cake layers and on top as a topping.
