Ingredients

  • 12 oz. semi-sweet chocolate
  • 4 oz. unsweetened chocolate
  • 12 oz. unsalted butter
  • 1 3/4 cups sugar
  • 1/2 cup water
  • 7 eggs
  • 1 cup heavy cream, whipped
  • chocolate curls for garnish

Instructions

  1. Cut the semi-sweet chocolate, unsweetened chocolate, and unsalted butter into small pieces.
  2. Place the chopped chocolates and butter in a bowl.
  3. In a saucepan, combine 1 1/2 cups sugar and water and bring to a boil.
  4. Pour the hot sugar syrup over the chocolate and butter mixture.
  5. Stir until the mixture is melted and smooth.
  6. In a mixer, whip the eggs and 1/4 cup sugar until doubled in size.
  7. Fold the whipped eggs into the chocolate mixture until no white streaks remain.
  8. Pour the batter into a greased, paper-lined 10-inch cake pan.
  9. Bake at 350°F on a sheet pan with 1 inch of water for 40 to 50 minutes until set.
  10. Allow the cake to cool in the refrigerator overnight.
  11. To release the cake, dip the pan in hot water and run a knife around the edge.
  12. Frost the cake with whipped cream and garnish with chocolate curls.
