Ingredients

  • 1/2 cup water
  • 1/2 cup light corn syrup
  • 1 cup firmly packed light brown sugar
  • 1 cup granulated sugar
  • 2 (1 oz.) squares unsweetened chocolate
  • 1/8 teaspoon nutmeg
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1/2 cup semi-sweet chocolate bits

Instructions

  1. Lightly oil the inside of a heavy 2-quart saucepan.
  2. Combine water and corn syrup in the pan.
  3. Cook over moderate heat until the mixture boils.
  4. Remove from heat.
  5. Add sugars, chocolate, and nutmeg to the pan.
  6. Cook over moderate heat, stirring constantly, until sugars are completely dissolved and chocolate is melted.
  7. Wipe down sugar crystals above the liquid line using a clean pastry brush dipped in cold water.
  8. Cook without stirring until the mixture boils.
  9. Wipe down sugar crystals again.
  10. Clip on a candy thermometer.
  11. Cook over moderate heat until the temperature reaches 260°F (hard ball stage).
