Ingredients

  • 2 to 3 lb. rhubarb, stewed
  • 1/2 c. brown sugar
  • 1/2 c. white sugar
  • 1 c. milk
  • 1 Tbsp. ground ginger
  • 1 c. sugar
  • 1 c. flour

Instructions

  1. Sweeten the stewed rhubarb with a combination of brown sugar and white sugar.
  2. Place the sweetened rhubarb in an ovenproof dish.
  3. Mix together flour, sugar, and milk to create a batter.
  4. Pour the batter over the rhubarb in the dish.
  5. Bake in a 400°F oven for 45 minutes until golden and bubbly.
