Ingredients

  • 2 tsp. sugar
  • 2 tsp. flour
  • 3/4 c. milk
  • 1 egg, slightly beaten
  • 2 oz. sweet baking chocolate
  • 2 Tbsp. white creme de menthe
  • 6 egg whites, stiffly beaten
  • butter

Instructions

  1. Combine 2 teaspoons sugar and flour in a saucepan.
  2. Gradually stir in milk, mixing well.
  3. Stir in the beaten egg and cook over low heat until thickened, stirring constantly.
  4. Remove from heat and cool.
  5. Melt the chocolate in the creme de menthe.
  6. Stir the melted chocolate mixture into the cooled egg mixture.
  7. Fold in the stiffly beaten egg whites.
  8. Spoon the mixture into four lightly buttered and granulated sugar-sprinkled souffle cups.
  9. Place the cups in a pan of hot water and bake at 350°F for 20 minutes or until the souffle tests done.
  10. Serve immediately.
