Ingredients

  • 4 skinned, boneless chicken breast halves
  • 1/3 cup Ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 3/4 cup seasoned bread crumbs
  • 1 (15.5 oz.) jar tomato sauce
  • 1 cup shredded Mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound the chicken breast halves thin between sheets of plastic wrap.
  3. In a bowl, mix ricotta cheese, grated Parmesan cheese, and beaten egg.
  4. Spread the cheese mixture evenly over each chicken breast.
  5. Roll up each chicken breast tightly and secure with four large toothpicks.
  6. Place the seasoned bread crumbs in a shallow dish.
  7. Dip each chicken roll-up into the beaten egg, then roll in the bread crumbs to coat thoroughly.
  8. Arrange the coated chicken roll-ups in a baking dish.
  9. Pour the jar of tomato sauce over the chicken.
  10. Sprinkle shredded mozzarella cheese on top.
  11. Bake in the preheated oven for 25-30 minutes until the chicken is cooked through and the cheese is bubbly and golden.
