- Combine sugar, water, and instant coffee; bring to a boil and cook for 3 minutes.
- Using the metal blade of a food processor, add heavy cream and process until very thick, about 1 minute.
- Transfer the whipped cream to a large bowl.
- Place the blade back into the food processor without rinsing the bowl.
- Add semi-sweet chocolate pieces and process on/off for 20 seconds.
- Continue processing, then add hot syrup, Kahlua, and egg yolks.
- Process for approximately 20 seconds until well combined.
- Fold the whipped cream into the chocolate mixture gently.
- Freeze or chill the mousse before serving.
