Ingredients

  • 2 c. sifted cake flour
  • 1 1/2 c. sugar
  • 2/3 c. unsweetened cocoa
  • 2 tsp. baking powder
  • 1 c. corn oil
  • 4 eggs
  • 3/4 c. water
  • 1 1/4 tsp. vanilla
  • 2 tsp. almond extract
  • 1/4 tsp. cream of tartar

Instructions

  1. Sift together the cake flour, sugar, cocoa, and baking powder into a large bowl.
  2. Add oil, egg yolks, water, and vanilla; beat until smooth.
  3. In a separate bowl, beat the egg whites with cream of tartar until peaks form.
  4. Fold the egg whites into the main batter gently.
  5. Pour the batter evenly into three well-greased and floured 8-inch layer pans.
  6. Bake in a preheated 350°F (175°C) oven for about 30 minutes, or until layers test done.
  7. Remove from the oven and cool on a rack.
  8. Spread Honey Coconut Filling between the layers.
  9. Top the cake with Chocolate Frosting.
