Ingredients

  • 1 envelope unflavored gelatin
  • 6 oz semi-sweet chocolate pieces
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 eggs, separated
  • 1/2 cup heavy cream, whipped

Instructions

  1. Sprinkle gelatin over 1/4 cup cold water and let it soften.
  2. Combine semi-sweet chocolate pieces, milk, sugar, and salt in the top of a double boiler.
  3. Heat over hot water, stirring occasionally, until the chocolate is melted.
  4. Stir in the softened gelatin until it is dissolved.
  5. Heat the mixture until the gelatin is fully melted and integrated.
  6. Remove from heat and stir in vanilla extract.
  7. In a separate bowl, beat egg yolks and fold into the chocolate mixture.
  8. Whip the heavy cream until soft peaks form.
  9. In a separate bowl, beat egg whites until stiff peaks form.
  10. Gently fold whipped cream and egg whites into the chocolate mixture until combined.
  11. Pour into serving dishes and refrigerate until set, about 2 hours.
