- Sprinkle gelatin over 1/4 cup cold water and let it soften.
- Combine semi-sweet chocolate pieces, milk, sugar, and salt in the top of a double boiler.
- Heat over hot water, stirring occasionally, until the chocolate is melted.
- Stir in the softened gelatin until it is dissolved.
- Heat the mixture until the gelatin is fully melted and integrated.
- Remove from heat and stir in vanilla extract.
- In a separate bowl, beat egg yolks and fold into the chocolate mixture.
- Whip the heavy cream until soft peaks form.
- In a separate bowl, beat egg whites until stiff peaks form.
- Gently fold whipped cream and egg whites into the chocolate mixture until combined.
- Pour into serving dishes and refrigerate until set, about 2 hours.
