Ingredients

  • 1 lb. lean ground beef
  • 4 (8 oz.) cans tomato sauce
  • 1/2 tsp. Italian seasoning
  • 1 c. raw macaroni
  • 1 can chickpeas, drained
  • 8 c. water
  • 4 beef bouillon cubes
  • 2 cans mixed vegetables, drained
  • 1 c. chopped onion

Instructions

  1. Brown the ground beef in a Dutch oven over medium heat.
  2. Add chopped onion and sauté for 5 minutes.
  3. Pour off excess fat from the beef mixture.
  4. Add tomato sauce, water, beef bouillon cubes, drained chickpeas, drained mixed vegetables, and Italian seasoning to the pot. Bring to a boil.
  5. Cover and simmer for 45 minutes.
  6. Add raw macaroni to the soup.
  7. Cover and cook for an additional 15 minutes, or until pasta is tender.
  8. Serve hot with grated cheese and Italian bread.
