Ingredients

  • 1 cup yellow cornmeal
  • 2 eggs, well beaten
  • 1 cup sweet milk
  • 1/2 teaspoon soda
  • 3/4 teaspoon salt
  • 1/2 cup Wesson oil
  • 1 (16 to 17 oz.) can cream-style corn
  • 1/2 pound ground beef
  • 1 large onion, finely chopped
  • 1/2 pound rat cheese or mild Cheddar cheese, grated
  • 2 jalapeno peppers, chopped

Instructions

  1. Mix the cornmeal, eggs, sweet milk, soda, salt, and oil; set aside.
  2. Saute the ground beef; let drain.
  3. Prepare the onion, cheese, and jalapenos; place in separate mounds ready to use.
  4. Grease and heat a large iron skillet.
  5. Pour half of the cornbread batter into the skillet.
  6. Add a layer of cooked ground beef, chopped onions, cheese, and jalapenos.
  7. Pour the remaining batter over the toppings.
  8. Bake until golden brown and cooked through, about 30 minutes.
