Ingredients

  • 3 lb onions
  • 4 bunches green onions
  • 4 bell peppers
  • 1 whole bulb garlic
  • 3.5 lb shrimp
  • 4.5-5 lb smoked sausage
  • 2 family size trays chicken wings
  • 12 live crabs
  • smoked turkey necks or ham
  • oysters (optional)
  • salt and pepper
  • 3/4 bottle file gumbo

Instructions

  1. Put crabs in sink; pour a large pot of boiling salty water over them.
  2. When they stop moving, they are dead. Remove the point on underside of shell and the top shell.
  3. Clean out the guts and fingers and break crabs in half. Rinse thoroughly.
  4. Prepare the gumbo base by sautéing chopped onions, green onions, bell peppers, and garlic in a large pot.
  5. Add smoked turkey necks or ham to the pot and cook until flavors meld.
  6. Incorporate cooked smoked sausage and chicken wings, and simmer to develop flavor.
  7. Add small to medium shrimp, crab meat, and optional oysters to the pot.
  8. Season with salt, pepper, Creole seasoning, and file gumbo to taste.
  9. Simmer until all ingredients are cooked through and flavors are well combined.
  10. Serve hot, garnished as desired.

Tips & Substitutions

For the best flavor, allow the gumbo to simmer longer; this helps meld the flavors beautifully. If you can't find fresh crabs, consider using pre-cooked crab meat for convenience. Additionally, smoked sausage can be substituted with andouille sausage for a spicier kick. Don't forget to adjust the seasoning based on your preferences, as each ingredient brings its own flavor to the dish.

Serving Suggestions

Serve the gumbo hot over a bed of rice for a hearty meal. It pairs wonderfully with crusty French bread or a light salad for balance. For added flavor, consider garnishing with chopped green onions or fresh parsley. This dish is perfect for gatherings and can be complemented by beverages like a cold beer or sweet tea.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove over low heat, adding a splash of water or broth to restore moisture. Gumbo can also be frozen for up to 3 months; thaw in the refrigerator before reheating.

Frequently Asked Questions

Can I make this gumbo ahead of time?

Yes, gumbo can be made a day in advance, which allows the flavors to develop even more. Simply reheat it on the stove before serving. Many find that gumbo tastes even better the next day!

What type of rice should I serve with gumbo?

Long-grain white rice is traditionally served with gumbo, as it absorbs the flavors well without becoming mushy. You can also opt for brown rice for a healthier alternative. Ensure the rice is cooked separately for the best texture.

How can I make this gumbo spicier?

To add more heat, incorporate diced jalapeños or a few dashes of hot sauce during cooking. You can also increase the amount of Creole seasoning or use a spicier sausage. Adjust to your taste for the perfect level of spice!
