Ingredients

  • 2 1/2 cups sugar
  • 1 cup corn oil
  • 4 eggs
  • 1 (16 oz) can pumpkin
  • 3 1/2 cups flour
  • 2/3 cup water
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 1/2 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice

Instructions

  1. Combine sugar, corn oil, and beaten eggs in a mixing bowl.
  2. Add pumpkin to the mixture and blend well.
  3. Sift together the flour, baking powder, baking soda, salt, ground cloves, cinnamon, nutmeg, and allspice.
  4. Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined.
  5. Pour in water and mix for 1 minute to incorporate.
  6. Divide the batter evenly into 3 greased and floured loaf pans or 2 tube pans.
  7. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
