Ingredients

  • 1 1/3 c. chopped candied cherries
  • 1 c. chopped candied pineapple
  • 1 1/2 c. chopped dates
  • 1 Tbsp. flour
  • 4 1/2 c. chopped pecans or walnuts
  • 1 1/4 c. coconut (not fresh or frozen)
  • 1 (14 oz.) can sweetened condensed milk

Instructions

  1. Preheat the oven to 250 degrees. Grease and flour a 9-inch springform pan with the tube insert. Combine the cherries, pineapple, dates and flour in a large bowl.
  2. Toss to coat the fruit with the flour.
  3. Add the pecans and coconut.
  4. Mix well.
  5. Add the condensed milk. Mix well. Press into prepared pan and bake for 1 1/2 hours.
  6. Cool completely before removing from pan.
  7. Wrap tightly in foil.
  8. It will keep, refrigerated, for several weeks.
