Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/3 cup water
  • 2 egg whites
  • 1 teaspoon vanilla
  • 3/4 cup coarsely chopped pecans or pistachios
  • 3/4 cup candied red and green cherries
  • 3 tablespoons shortening
  • 1/2 cup cocoa

Instructions

  1. In the top of a double boiler over hot water, melt shortening; add cocoa and stir until smooth.
  2. Set aside over warm water.
  3. In a large saucepan, combine sugar, corn syrup, and water; cook over medium heat, stirring until sugar dissolves.
  4. Lower heat slightly and cook uncovered, without stirring, to 260° (hard-ball stage).
  5. Remove from heat.
  6. Immediately, pour syrup in a thin stream into egg whites, beating on high speed of an electric mixer.
  7. Add vanilla; beat until candy begins to hold its shape.
  8. Quickly blend in cocoa mixture, nuts, and cherries.
  9. Drop by teaspoons onto wax paper.
