Ingredients

  • oil for frying
  • 1 cup water
  • 6 tablespoons butter
  • 1/8 teaspoon salt
  • 1 cup all-purpose flour
  • 3 eggs
  • powdered cinnamon or nutmeg
  • approximately 1 cup sugar

Instructions

  1. Pour oil 1-inch deep into a 10-inch skillet.
  2. Heat the oil to 370°F (approximately 3-4 minutes). Bring water to a boil in a 2-quart saucepan.
  3. Add butter and salt to the boiling water. Heat until the butter is melted.
  4. Add all the flour at once; remove from heat.
  5. Beat until the mixture is smooth and has the consistency of mashed potatoes.
  6. Beat in one egg at a time until fully incorporated.
  7. Transfer the mixture into a pastry bag fitted with a star tip.
  8. Squeeze directly into hot oil, making churros about 8 inches long.
  9. Cook 3 or 4 churros at a time until they are deep golden brown, turning occasionally.
  10. Drain the churros over the skillet, then on paper towels.
