Churros(Long Johns)
Crispy, golden churros with a hint of cinnamon or nutmeg, perfect as a sweet snack or dessert for sharing. Crispy on the outside, soft inside, irresistibly flavorful.

- Pour oil 1-inch deep into a 10-inch skillet.
- Heat the oil to 370°F (approximately 3-4 minutes). Bring water to a boil in a 2-quart saucepan.
- Add butter and salt to the boiling water. Heat until the butter is melted.
- Add all the flour at once; remove from heat.
- Beat until the mixture is smooth and has the consistency of mashed potatoes.
- Beat in one egg at a time until fully incorporated.
- Transfer the mixture into a pastry bag fitted with a star tip.
- Squeeze directly into hot oil, making churros about 8 inches long.
- Cook 3 or 4 churros at a time until they are deep golden brown, turning occasionally.
- Drain the churros over the skillet, then on paper towels.
