Ingredients

  • 1/2 large carrot
  • 1/2 large tomato
  • apple cider
  • 2 Tbsp cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/3 cup olive oil

Instructions

  1. In a food processor with a chopping blade, process the carrot and tomato until finely chopped.
  2. Strain the vegetables through a sieve over a 1 cup measuring cup, pressing with the back of a spoon to extract as much liquid as possible; discard the vegetables.
  3. Add enough apple cider to make 1/2 cup of liquid.
  4. In a bowl, whisk together the cider mixture, cider vinegar, Dijon mustard, salt, and black pepper.
  5. Gradually whisk in the olive oil until the dressing is emulsified.
