Ingredients

  • 1 Tbsp. olive oil
  • 3 minced garlic cloves
  • 1 chopped onion
  • 4 chopped tomatoes
  • 1/4 c. lemon juice
  • 1 zucchini squash, sliced
  • salt
  • pepper

Instructions

  1. In a large skillet, saute olive oil, chopped onion, and minced garlic until the onion is transparent.
  2. Add chopped tomatoes, sliced zucchini, salt, pepper, and lemon juice to the skillet.
  3. Cook until vegetables are tender and flavors meld.
  4. Pour the mixture over cooked spaghetti and toss to combine.
