Cinnamon Apple Oat Bread

Ingredients

  • 1 3/4 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 egg and 2 egg whites, slightly beaten
  • 2/3 c. skim milk
  • 2/3 c. firmly packed brown sugar
  • 1/4 c. oil
  • 1 1/2 c. Post oat flakes
  • 1 c. finely chopped, peeled apples
  • 1/4 c. chopped walnuts

Instructions

  1. Mix
  2. flour,
  3. baking powder, cinnamon and salt. Combine egg, egg
  4. whites, milk, sugar and oil.
  5. Add to flour mixture; stir until moistened.
  6. Stir in cereal, apples and nuts. Pour into well-greased
  7. 9
  8. x 5-inch loaf pan.
  9. Bake at 350° for 55 minutes or until
  10. tester
  11. comes out clean.
  12. Cool 10 minutes; remove
  13. from pan
  14. and
  15. cool
  16. completely.
  17. Makes 18 (1/2 inch) slices.
