Citrus slices are delightful cookies featuring bright lemon or orange flavors, coated in colored sugar, perfect for festive occasions or a tangy treat with tea.

Ingredients

  • 1/2 cup shortening
  • 1/2 cup butter
  • 3 cups flour
  • 1 cup sugar
  • 1 egg
  • 1/4 teaspoon baking soda
  • 1 teaspoon lemon or orange juice
  • 1 teaspoon grated lemon or orange peel
  • 1 teaspoon vanilla

Instructions

  1. Beat shortening and butter in a large bowl until softened, about 30 seconds.
  2. Add about half of the flour and mix well.
  3. Add sugar, lemon or orange juice, vanilla, baking soda, and salt; beat until thoroughly combined, scraping sides of the bowl.
  4. Beat in lemon or orange peel and remaining flour.
  5. Shape dough into two logs and wrap in plastic wrap or wax paper.
  6. Chill for 4 to 24 hours.
  7. Roll logs in colored sugar.
  8. Cut dough into 1/4-inch slices and then cut each slice in half.
  9. Bake at 375°F (190°C) for 8 to 10 minutes until edges are firm.
  10. Transfer cookies to racks and cool.
  11. Glaze with Citrus Glaze.
