Ingredients

  • 1 medium cucumber, peeled and sliced thin
  • 1 medium grapefruit, peeled and cut into bite-size pieces
  • 1 medium orange, peeled and cut into bite-size sections
  • 1/3 c. red onion, sliced thin
  • 1 tsp. lemon juice
  • 1 tsp. olive oil
  • 1 tsp. red wine vinegar
  • 1/4 tsp. tarragon, crushed
  • 1/4 tsp. salt

Instructions

  1. In bowl, toss all ingredients.
  2. Chill well before serving. Makes 3 cups or 4 diet servings.
