Citrus Vegetable Salad
Ingredients
- 1 medium cucumber, peeled and sliced thin ⓘ
- 1 medium grapefruit, peeled and cut into bite-size pieces ⓘ
- 1 medium orange, peeled and cut into bite-size sections ⓘ
- 1/3 c. red onion, sliced thin ⓘ
- 1 tsp. lemon juice ⓘ
- 1 tsp. olive oil ⓘ
- 1 tsp. red wine vinegar ⓘ
- 1/4 tsp. tarragon, crushed ⓘ
- 1/4 tsp. salt ⓘ
Instructions
- In bowl, toss all ingredients.
- Chill well before serving. Makes 3 cups or 4 diet servings.
