Ingredients

  • 1 cup light brown sugar
  • 1/2 cup margarine
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup raisins

Instructions

  1. Cream butter and light brown sugar together until well blended.
  2. Add beaten egg and vanilla extract; mix thoroughly.
  3. Gradually add flour, baking soda, and salt, mixing after each addition.
  4. Fold in raisins (and coconut if desired).
  5. Drop spoonfuls of dough onto a greased cookie sheet, spacing them about 3 inches apart.
  6. Bake in a preheated oven at 375°F (190°C) for 10 to 12 minutes until golden brown.
  7. Remove from oven and cool slightly before transferring to a wire rack.
