Ingredients

  • 1/2 lb. chorizo, sliced 1/4-inch
  • 1 1/2 lb. stew meat, in small cubes
  • 1 large Spanish onion, coarsely chopped
  • 2 medium carrots, thinly sliced
  • 1 (1 lb.) can tomatoes
  • 2 Tbsp. instant beef granules
  • 4 to 5 cups water
  • 1 can chickpeas or frozen black-eyed peas
  • 3/4 to 1 lb. yams, in small cubes, steamed

Instructions

  1. In a 5-quart saucepan, lightly brown the sliced chorizo.
  2. Remove the chorizo with a slotted spoon and set aside.
  3. Add the stew meat to the drippings in the pan and brown.
  4. Just before the beef is finished browning, add the chopped onions and stir to brown lightly.
  5. Add the cooked chorizo, sliced carrots, canned tomatoes, and beef granules dissolved in water.
  6. Simmer covered until the beef is tender and the carrots are done.
  7. Skim off some of the fat from the surface.
  8. Add the canned chickpeas, steamed yams with their juices, salt, and pepper.
  9. Reheat the stew before serving.
