Lettuce-wrapped picadillo combines savory ground beef with sweet raisins and spicy hot sauce, served in crisp lettuce leaves for a flavorful, healthy, and customizable meal.

Ingredients

  • 1 lb. extra-lean ground beef
  • 2 garlic cloves, minced
  • 1/2 (10 oz.) pkg. frozen onion and pepper medley
  • 1 (8 oz.) can tomato sauce
  • 1/2 cup golden raisins
  • 2 to 3 teaspoons hot sauce
  • vegetable cooking spray
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Spray a skillet with vegetable cooking spray and heat over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add minced garlic, frozen onion and pepper medley or chopped onion, green pepper, and celery if substituting.
  4. Cook until vegetables are tender and beef is cooked through.
  5. Stir in tomato sauce, golden raisins, ground cumin, salt, black pepper, and hot sauce.
  6. Simmer for about 10 minutes to allow flavors to meld.
  7. Serve the picadillo in lettuce leaves, wrapped as desired.
