Ingredients

  • 2 1/4 cups sifted flour
  • 1 1/2 cups sugar
  • 2 1/2 teaspoons double acting baking powder
  • 1 teaspoon salt
  • 3/4 cup shortening
  • 3/4 cup milk
  • 1 1/2 teaspoons vanilla
  • 3 eggs

Instructions

  1. Sift the flour, sugar, baking powder, and salt into a mixing bowl.
  2. Drop in the shortening.
  3. Add milk and vanilla; beat 300 strokes (about 2 minutes at low speed), scraping the bowl.
  4. Add eggs and beat for 2 minutes on low speed.
  5. Bake at 375°F for 25 to 30 minutes.
  6. Frost the cake and sprinkle with flaked coconut.
