Ingredients

  • 1 1/2 cups sugar
  • 4 cups milk
  • 1/2 cup flour
  • 4 egg yolks
  • 2 teaspoons vanilla
  • 14 to 16 ounces coconut
  • 2 baked deep-dish pie crusts

Instructions

  1. Mix sugar and flour in a saucepan.
  2. Beat egg yolks and add milk, then combine with dry ingredients.
  3. Cook over medium heat, stirring constantly until thickened.
  4. Remove from heat, add vanilla and coconut, and mix well.
  5. Pour the filling into baked deep-dish pie crusts.
  6. Beat egg whites until stiff, gradually adding 2 tablespoons sugar.
  7. Spread the meringue over the pies.
  8. Bake or brown the meringue until golden.
