Coconut Krispies are delightful sweet treats combining crispy rice cereal, chewy dates, toasted walnuts, and coconut for a tropical-inspired snack suitable for parties or casual gatherings.

Ingredients

  • 1 stick margarine
  • 1 cup sugar
  • 1 cup chopped dates
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups Rice Krispies
  • 1/2 cup chopped walnuts
  • 1/2 package shredded coconut

Instructions

  1. Melt margarine in a saucepan, then add sugar, chopped dates, and beaten egg.
  2. Stir constantly for 5 minutes or until the mixture bubbles.
  3. Remove from heat, then add vanilla, Rice Krispies, and chopped walnuts.
  4. With greased hands, form the mixture into balls and roll them in coconut.
  5. Place the coconut-covered balls on wax paper to cool and set.
