  • 14 oz. can Eagle Brand sweetened condensed milk
  • 2 egg yolks
  • 1/2 cup ReaLemon lemon juice from concentrate

  • 1 18 1/4 oz. package white cake mix
  • 4 oz. frozen nondairy whipped topping, thawed

Instructions

  1. Preheat oven to 350°F.
  2. In a medium saucepan, combine sweetened condensed milk, egg yolks, lemon juice, lemon rind, and food coloring if desired.
  3. Cook over medium heat, stirring constantly, until thickened, about 10 minutes.
  4. Chill the lemon mixture.
  5. Prepare the cake mix according to package instructions.
  6. Pour batter into two well-greased and floured 8 or 9-inch round layer cake pans.
  7. Bake for 30 minutes or until lightly browned.
