Ingredients

  • 1 1/2 cups sugar
  • 1 cup packed brown sugar
  • 1/3 cup light cream
  • 1/3 cup milk
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla
  • 1 (3 1/2 oz.) can flaked coconut

Instructions

  1. Line an 8 x 4 x 2-inch loaf pan with foil, extending the foil over the edges of the pan.
  2. Butter the foil.
  3. Set the prepared pan aside.
  4. In a saucepan, combine sugar, brown sugar, light cream, and milk.
  5. Cook over medium heat, stirring constantly, until the mixture reaches the soft ball stage (about 234-240°F).
  6. Remove from heat and stir in butter and vanilla.
  7. Add flaked coconut and mix well.
  8. Pour the mixture into the prepared loaf pan.
  9. Allow to cool and set before slicing.
