Ingredients

  • 1/4 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1/4 cup self-rising flour
  • 1/2 can (3 1/2 oz.) flaked coconut
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease a 9-inch pie pan and set aside.
  3. In a mixing bowl, cream margarine and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Add milk and self-rising flour and blend well.
  6. Stir in flaked coconut and vanilla extract.
  7. Pour the mixture into the prepared pie pan.
  8. Bake for 45 minutes or until set.
  9. Allow to cool slightly before serving.
