Coconut Rice

Ingredients

  • 2 tsp oil
  • 3/4 cup shredded coconut
  • 1/2 cup finely chopped onion
  • 2 cups rice
  • 4 cups chicken broth
  • 1 small mango, peeled and chopped
  • 1/4 cup fresh chives, chopped

Instructions

  1. Heat oil in a large saucepan.
  2. Add shredded coconut and cook and stir until browned.
  3. Add chopped onion and cook for 1 minute.
  4. Stir in rice.
  5. Add chicken broth and bring to a boil.
  6. Cover, reduce heat to low, and simmer for 25 to 30 minutes until liquid is absorbed and rice is tender.
  7. Remove from heat.
  8. Stir in chopped mango.
  9. Sprinkle with chopped chives.
