Ingredients

  • 3 (19 oz.) cans sweet potatoes
  • 3/4 cup walnut halves
  • 1/2 cup flaked coconut
  • 1/4 cup butter
  • 1 cup brown sugar
  • 1/4 cup rum or orange juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Drain and mash the sweet potatoes if using canned.
  2. In a large mixing bowl, combine sweet potatoes, melted butter, brown sugar, cinnamon, nutmeg, and salt. Mix well.
  3. Stir in the rum or orange juice, if using.
  4. Spread the mixture into a greased baking dish.
  5. Sprinkle walnut halves and flaked coconut evenly over the top.
  6. Bake in the preheated oven for 25-30 minutes or until heated through and golden on top.
