Ingredients

  • 1 lb marshmallows
  • 1 cup strong coffee
  • 1 pint whipping cream
  • 1 small package dates, chopped
  • 3/4 cup chopped pecans
  • 1 small bottle maraschino cherries, drained and chopped
  • 1 box graham crackers, crushed fine

Instructions

  1. Melt marshmallows in a double boiler, then add hot coffee, blend, and set aside to cool.
  2. Whip the cream until firm and fold into the cooled marshmallow mixture.
  3. Add chopped cherries, chopped dates, and chopped pecans into the mixture and fold gently.
  4. Sprinkle finely crushed graham cracker crumbs into a large dish to cover the bottom.
  5. Pour the mixture over the crushed graham crackers, then top with more crumbs and chopped nuts if desired.
  6. Cover and refrigerate overnight to set.
  7. Serve chilled, topped with whipped cream and a cherry.
