- Bring the coffee, sugar, cream, butter, salt, and cream of tartar to a boil in a large, heavy pan.
- Remove from heat and stir until the sugar and other ingredients are dissolved.
- Cook, stirring constantly, until the mixture reaches a boil.
- Cover the pan and cook for 3 minutes.
- Uncover and cook over moderate heat until the mixture boils again.
- Add the almond extract or cinnamon.
- Beat the mixture until it starts to harden.
- Add the broken pecans or hickory nuts.
- Pour the fudge onto a buttered surface and allow it to cool and harden before cutting into squares.
