Ingredients

  • 1 cup strong coffee
  • 2 cups sugar
  • 1 tablespoon cream
  • 1 tablespoon butter
  • 1/8 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon almond extract or cinnamon
  • 1 cup broken pecans or hickory nuts

Instructions

  1. Bring the coffee, sugar, cream, butter, salt, and cream of tartar to a boil in a large, heavy pan.
  2. Remove from heat and stir until the sugar and other ingredients are dissolved.
  3. Cook, stirring constantly, until the mixture reaches a boil.
  4. Cover the pan and cook for 3 minutes.
  5. Uncover and cook over moderate heat until the mixture boils again.
  6. Add the almond extract or cinnamon.
  7. Beat the mixture until it starts to harden.
  8. Add the broken pecans or hickory nuts.
  9. Pour the fudge onto a buttered surface and allow it to cool and harden before cutting into squares.
