A refreshing cold cherry soup with hints of cinnamon and lemon, perfect for summer gatherings or as a light dessert showcasing the sweet-tart cherry flavor.

Ingredients

  • 20 oz. can cherry pie filling
  • 20 whole cloves
  • 2 Tbsp. lemon juice
  • 1 pt. light cream or half and half
  • 1 can water
  • 1 cinnamon stick
  • 2 tsp. cinnamon sugar
  • 3 slices lemon peel
  • 2 Tbsp. sugar

Instructions

  1. In a large saucepan, mix the cherry pie filling and water.
  2. Add all remaining ingredients except the cream, and stir well.
  3. Bring to a boil over medium-high heat.
  4. Boil for 1 minute, stirring constantly.
  5. Remove from heat and cool to room temperature.
  6. Stir in the light cream or half and half.
  7. Refrigerate until chilled.
  8. Serve cold.
