Ingredients

  • 1 large bunch beets
  • 2 qt. water
  • 1 tsp. parsley
  • 1 small onion
  • salt and pepper to taste
  • 1 Tbsp. vinegar
  • 1 Tbsp. lemon juice
  • 1/2 cup sour cream

Instructions

  1. Cook beets until tender.
  2. Peel and slice the cooked beets.
  3. In a large pot, combine water, cooked beets, parsley, onion, salt, and pepper.
  4. Simmer for about 1 hour.
  5. Add vinegar and lemon juice toward the end of cooking.
  6. Remove the onion from the pot.
  7. Sieve out the vegetables, reserving the liquid.
  8. Process the vegetables in a blender with some of the liquid until smooth.
  9. Stir in the sour cream.
  10. Combine the sour cream mixture with the remaining liquid and refrigerate overnight.
  11. Serve cold, garnished with a dollop of sour cream, accompanied by small hot new potatoes.
