Ingredients

  • 1 qt. vinegar
  • 1/4 c. salt (not iodized)
  • 2 c. light brown sugar, packed
  • 1/4 c. dry mustard

Instructions

  1. Mix a paste of the dry mustard and salt, then blend into the vinegar to create the brine.
  2. Use small whole cucumbers with stems intact; for larger cucumbers, wash and cut into spears.
  3. Place the prepared cucumbers in a large jar or crock.
  4. Pour the vinegar mixture over the cucumbers, ensuring they are fully submerged.
  5. Weights the cucumbers down with a plate or non-metal object to keep them below the brine.
