Ingredients

  • 5 c. warm water
  • 1 to 2 pkg. yeast
  • 1/2 c. oil
  • 1/2 c. molasses
  • 1/2 c. honey
  • 2 tsp. to 1 Tbsp. salt
  • 1 tsp. poppy seed
  • 1 tsp. sunflower seeds
  • 1 tsp. seed of your choice
  • 8 c. whole wheat flour
  • 2 to 3 c. rye flour
  • unbleached flour or other flour, enough to make soft dough

Instructions

  1. Heat 4 cups of water using a coffeemaker.
  2. In a small bowl, combine 1/2 cup hot water with enough cold water to make warm water, not hot.
  3. Dissolve yeast in hot water.
  4. In a large plastic bowl, combine the 4 1/2 cups hot water with the remaining cold water.
  5. Using a two-cup measuring cup, pour in oil first, then molasses and honey, and add salt; stir well.
  6. Gradually add whole wheat flour to the mixture.
  7. Mix in seeds.
  8. Add remaining flour until the dough is soft but firm.
  9. Knead the dough well and rub the surface with a little oil.
  10. Cover the bowl and let the dough rise until doubled in size.
  11. Punch down the dough and divide into three parts.
  12. Shape into loaves and place in bread pans or cake pans.
  13. Bake at 325°F (160°C) for 20 to 30 minutes until the top is nicely browned.
  14. Remove from pans and cool on racks.
  15. Rub the surface with a stick of butter while hot and let cool, covering with a cloth if desired.
