Ingredients

  • 1/2 cabbage (about 5 cups)
  • 1/2 medium onion, finely grated
  • 1 cup coarsely grated carrots
  • 1 small green pepper, finely sliced
  • 1 teaspoon salt
  • 2 1/2 tablespoons sugar
  • 2 1/2 tablespoons white wine vinegar
  • 1 1/3 cups mayonnaise

Instructions

  1. Cut the cabbage in half, then in half again to make wedges.
  2. Slice the cabbage wedges diagonally into thin strips.
  3. Mix the cabbage with the finely grated onion and coarsely grated carrots.
  4. Combine the green pepper with salt, sugar, vinegar, and mayonnaise to make the dressing.
  5. Toss the shredded cabbage mixture with the dressing.
  6. Refrigerate the coleslaw for at least one hour before serving.
