Instructions
- Melt butter in a nonstick frying pan.
- Add eggs to the pan.
- Cook eggs slowly until the yolk begins to change.
- Sprinkle with Parmesan cheese at least 1/8 inch thick.
- Slowly add vinegar, one teaspoon at a time, to the outer edge of the pan.
- Allow the eggs to flash cook with the vinegar.
- Serve with bread and preserves.
