Creamy eggs cooked slowly with Parmesan cheese and a splash of vinegar create a delicate, flavorful dish perfect for brunch or a sophisticated breakfast treat.

Ingredients

  • 6 to 7 eggs
  • 2 Tbsp butter
  • Parmesan cheese
  • 4 tsp vinegar

Instructions

  1. Melt butter in a nonstick frying pan.
  2. Add eggs to the pan.
  3. Cook eggs slowly until the yolk begins to change.
  4. Sprinkle with Parmesan cheese at least 1/8 inch thick.
  5. Slowly add vinegar, one teaspoon at a time, to the outer edge of the pan.
  6. Allow the eggs to flash cook with the vinegar.
  7. Serve with bread and preserves.
