A colorful veggie bake featuring tender California Blend vegetables, creamy Velveeta cheese, and crunchy cracker topping—perfect for comforting family dinners or potlucks.

Ingredients

  • 2 (16 oz.) pkg. frozen California Blend veggies
  • 8 oz. Velveeta cheese, cubed
  • 6 Tbsp. butter, divided

Instructions

  1. Prepare vegetables according to package directions. Drain.
  2. Place half of the vegetables in a greased 11 x 7 x 2-inch baking dish.
  3. In a small saucepan, combine Velveeta cheese and 4 tablespoons of butter.
  4. Cook and stir over low heat until melted.
  5. Pour half of the cheese mixture over the vegetables.
  6. Repeat layers with remaining vegetables and cheese mixture.
  7. Melt the remaining butter.
  8. Toss melted butter with cracker crumbs.
  9. Sprinkle cracker crumbs over the top of the casserole.
  10. Bake uncovered at 325°F for 20 to 25 minutes.
