  • 1 cup chopped Monterey Jack cheese
  • coarse pepper to taste

  2. Drain the vegetables, reserving the liquid.
  3. Add water to the reserved liquid to measure 1/4 cup.
  4. Combine the cooked vegetables with coarse pepper and 3/4 cup of shredded Monterey Jack cheese.

  6. Cover the casserole and bake at 350°F for 20 minutes.
  7. Remove from oven, sprinkle with the remaining cheese, and bake uncovered for an additional 2 minutes.

Tips & Substitutions

For added flavor, consider incorporating fresh herbs like thyme or rosemary. If you can't find rutabaga, parsnips or turnips can serve as a suitable substitute. You could also experiment with different cheeses such as cheddar or gouda for a unique twist. Make sure to season well with coarse pepper to enhance the dish’s overall taste.

Serving Suggestions

This Company Veggie Bake pairs beautifully with a crisp green salad or as a side to roasted meats. For a heartier meal, serve it alongside quinoa or couscous. You might also consider offering a dollop of sour cream or yogurt on top for added creaminess and tang.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, place the veggie bake in the oven at 350°F until warmed through, about 10-15 minutes. You can also microwave individual portions, but the oven will help maintain the texture and flavor.
