Ingredients

  • 3 egg whites
  • 1/2 tsp. cream of tartar
  • 1 c. sugar
  • 18 saltine crackers
  • 1 c. pecans
  • 1 tsp. vanilla
  • 1 large Cool Whip
  • 1/2 pt. preserves

Instructions

  1. Beat egg
  2. whites until frothy. Add cream of tartar and sugar; beat until stiff. Crumble saltines, pecans and vanilla.
  3. Mix gently
  4. with
  5. egg
  6. whites. Spread in
  7. buttered 9 x 13-inch pan and
  8. cook
  9. 25
  10. minutes at 350°.
  11. Cool completely. Mix
  12. preserves and Cool Whip; spread over meringue.
  13. Sprinkle with
  14. coconut. Refrigerate
  15. 24
  16. hours.
  17. Any
  18. preserves may be used.
  19. Pineapple and apricot are very good. Serves 24.
