Ingredients

  • 1 lb. ground beef
  • 1 Tbsp. instant minced onion
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 10 oz. frozen mixed vegetables, broken apart
  • 11 oz. can condensed Cheddar cheese soup
  • 16 oz. frozen fried shredded potato rounds

Instructions

  1. Preheat the oven to 375°F.
  2. Mix ground beef, instant minced onion, salt, and pepper in an ungreased 2-quart casserole dish.
  3. Arrange the frozen mixed vegetables over the meat, then pour the condensed Cheddar cheese soup on top of the vegetables.
  4. Cover the casserole with the frozen fried shredded potato rounds.
  5. Bake uncovered for 1 hour or until the potatoes are golden brown.
