Ingredients

  • 6 slices bacon or large piece of ham
  • 1/3 cup chopped onion
  • 6 oz. can mushrooms
  • 8 eggs
  • 1 cup milk
  • 2 Tbsp. pimento
  • 1 Tbsp. parsley
  • 1/2 tsp. salt
  • 1 cup sharp cheese
  • 1 cup Swiss cheese

Instructions

  1. Fry bacon and crumble it once cooked.
  2. Cook chopped onion until tender, then add canned mushrooms and cook briefly.
  3. Combine eggs, milk, pimento, parsley, salt, and the cheese-flour mixture.
  4. Toss sharp cheese with flour until coated, then add to the egg mixture.
  5. Pour the mixture into a 1 1/2-quart casserole dish.
  6. Bake in a preheated oven at 350°F (175°C) for 40 minutes or until set.
