Ingredients

  • 12 oz rotini pasta
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 purple onion, diced
  • 1.5 cups celery, diced
  • 1 can ripe black olives, sliced
  • 3 carrots, julienned
  • 1 box fresh mushrooms, sliced

Instructions

  1. Cook the rotini pasta according to the package directions.
  2. Drain the pasta and blanche under cold running water until cool.
  3. Add all diced vegetables, sliced black olives, and julienned carrots to the pasta.
  4. Pour the Italian salad dressing over the mixture and toss well to combine.
  5. Cover and refrigerate overnight to allow flavors to meld.
