Ingredients

  • 2 (3 oz.) pkg. lemon flavored Jell-O
  • 2 c. boiling water
  • 1 (20 oz.) can crushed pineapple, drained
  • 1 c. shredded carrots
  • 1 c. shredded Cheddar cheese
  • 3/4 c. chopped pecans (optional)

Instructions

  1. Dissolve the lemon flavored Jell-O in boiling water.
  2. Drain the crushed pineapple and reserve the juice; add water to the juice to make 2 cups, then stir into the Jell-O mixture.
  3. Chill until the mixture reaches the consistency of unbeaten egg whites.
  4. Stir in the drained pineapple, shredded carrots, shredded Cheddar cheese, and chopped pecans if using.
  5. Pour into a lightly oiled 6-cup mold.
  6. Cover and chill until the Jell-O is firm.
  7. Unmold onto lettuce leaves if desired before serving.
