- Make a well in the center and add oil, egg yolks, water, vanilla, and lemon rind.
- Mix well until combined.
- In a large bowl, beat egg whites and cream of tartar until stiff peaks form.
- Pour yolk mixture slowly over the whites, blending carefully with a spatula.
- Pour the batter into an ungreased tube pan.
- Bake for 55 minutes, then increase oven temperature to 350°F (175°C) and bake for an additional 10 to 15 minutes.
- Cool the cake upside down over a bottle.
