Ingredients

  • 2 c. flour
  • 1 1/2 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. oil
  • 7 egg yolks
  • 3/4 c. cold water
  • 2 tsp. vanilla
  • 2 tsp. grated lemon rind
  • 1 c. egg whites
  • 1/2 tsp. cream of tartar

Instructions

  1. Sift into a bowl the flour, sugar, baking powder, and salt.
  2. Make a well in the center and add oil, egg yolks, water, vanilla, and lemon rind.
  3. Mix well until combined.
  4. In a large bowl, beat egg whites and cream of tartar until stiff peaks form.
  5. Pour yolk mixture slowly over the whites, blending carefully with a spatula.
  6. Pour the batter into an ungreased tube pan.
  7. Bake for 55 minutes, then increase oven temperature to 350°F (175°C) and bake for an additional 10 to 15 minutes.
  8. Cool the cake upside down over a bottle.
