Ingredients

  • 1/2 cup chopped roasted peanuts
  • 1/2 cucumber, peeled, seeded and diced (about 1/2 cup)
  • 1/4 cup chopped cilantro
  • 1 jalapeno pepper, stemmed, seeded and minced, optional
  • 2 Tbs. lime juice
  • 1 Tbs. grated fresh ginger
  • 1/2 tsp. salt

Instructions

  1. Toss together all ingredients in small bowl.
